  • ½ tsp vanilla extract

  • 1 cinnamon stick

  • 1-2 cardamom (optional, for extra warmth)

  • 30g (1 oz) dark chocolate (70% cocoa or higher), melted

  • Crushed nuts (almonds or hazelnuts) for garnish

Directions

  • Poach the Pears
  • In a small saucepan, combine the wine, water, vanilla, and spices. Bring to a gentle simmer.
  • Carefully place the pears in the liquid and simmer for about 20-25 minutes, turning occasionally, until they are tender but still hold their shape.
  • Reduce the Syrup
