Ingredients

  • 1 medium-sized sweet potato

  • 2oz of cooked skinless chicken breasts

  • 1 tomato (or 5 cherry tomatoes)

  • ½ avocado

  • 2tbsp Greek yogurt

  • 1oz canned kidney beans

  • 1 garlic clove (or ½ tsp of garlic puree)

  • 1tbsp parmesan

  • Spices: salt, paprika, parsley, onion flakes)

Directions

  • Wash and peel the sweet potato. Pierce it several times with a fork. Wrap the sweet potato on parchment paper and microwave for 7 mins or until they are tender when pierced with a fork.
  • While the sweet potatoes are cooking, prepare the filling. Chop tomatoes and the chicken, and then mix them together with kidney beans.
  • Preheat the oven to 400˚F.
  • Once the potato is ready spoon the filling mixture on top of it and sprinkle with half of the parmesan. Pop it into the oven for 20 minutes.
  • While the potato is baking prepare the dressing by mixing mashed avocado with Greek yogurt, minced garlic, parmesan, and the spices.
  • Remove the sweet potatoes from the oven and top it off with the yogurt dressing. You can sprinkle them with parmesan if desired.
